Multiple NIC in Hyper-V Environment

Server 4.4 running on Windows Server 2008 R2 Hyper-V-Host
Client 4.4 running on Windows Server 2003 R2 Hyper-V-Guest
USB - Sentinel UltraPRO
 
I want to use an "Internal virtual network" to share between the Host and the Guest. Is there a way to select which adapter UoN allows to operate on?
 
Also does the client and server application windows need to remain open or can you X out and still have connectivity? Can this run as a Service which would allow logging off the OS?

There is no way to choose between adapters on USB over Network. The only thing you can do is to specify IP address and TCP port number. That will be enough.  
 
The software runs as a service, that's why you can have it running prior to logon.
